Shrimp Casserole - For the Recipe Box

I love shrimp!  In any type of recipe, I love shrimp!  The recipe I'm sharing today is a Shrimp Casserole.  Many years ago, on the PBS channel, there was a cooking show starring Miss Lucy.  Miss Lucy is a sweet little Cajun grandma sharing her recipes with us.  As she cooked it on her show, I was writing the recipe down and have made it every since.

Shrimp Casserole

1 pound shrimp, peeled & deveined
1/2 stick margarine
1/2 cup green onions
1/2 cup chopped bell peppers
1 cup chopped onion
1can cream of mushroom soup
1/2 can of cheddar cheese soup
1 cup raw rice, cooked
salt & pepper to taste

Chop vegetables.  Saute in margarine until soft.  Add shrimp, cook until pink, stirring often.  Add soups, seasoning and rice.  Pour in 9X13 pan.  Cover and bake for 20 minutes at 350.  Uncover, then cook for an additional 10 minutes.
You can add additional cheddar cheese soup if you prefer.  In the past, I have shortened the cooking time and the dish basically came out the same since the ingredients are cooked prior to mixing.
